Last Sunday, I felt the need to bake. I made
my mom's fudge brownies, which came out pretty well. The texture was awesome (beating the egg and sugar until they are very pale and thick is the trick), but I used inferior chocolate, and it showed. Or tasted. You know what I mean.
Good chocolate: it is key.
